Chicken Florentine

When I’m looking for a delicious dinner that is quick, and good for all seasons, I look at my Chicken Florentine recipe. This is not only delicious is got tons of veggies and flavor and it is so easy to make! This recipe makes enough that you can have it for lunch the next day! I usually give my kids the chicken and leave out the spinach on their plates because they ‘don’t like green stuff’. So if your kids are picky with veggies, I’d just do that too!

Ingredients:

  • 3lbs Chicken cut into small tender-sized pieces

  • Olive Oil

  • Salt

  • Pepper

  • 2 Cups Heavy Whipping Cream

  • 1 Cup Parmesean

  • 1/2 Cup Butter

  • Onions

  • 4 Cups Spinach

  • 1/8 cup flour

Directions:

  1. Preheat dutch oven with olive oil. Cook onions in olive oil.

  2. Season chicken with salt and pepper. Cook in olive oil until browned (about 10-12 mins).

  3. Add in heavy whipping cream, butter, flour.

  4. Cook until thickened. Add in more flour if you desire a thicker sauce

  5. Once all is combined let chicken cook another 5-7 mins until thoroughly cooked.

  6. Add in spinach and let simmer until spinach is fully cooked.

  7. Once spinach is wilted serve in low bowl. You can make rice or pasta as part of this dish too!

Sometimes we add in mushrooms or peas to this dish too!
