Garlic Chicken Nuggets with Rice and Broccoli

This meal is super easy and delicious. It is also good for you, BONUS. Which I always try to make healthy meals for my family but sometimes they have a lot of cheese, butter, etc. So I like to try to find less heavy dinners that are still delicious and everyone likes. These nuggets are my kid’s favorites and bonus this dinner (when I make 5lbs of chicken) doubles as meal prep for the week! Enjoy!

Ingredients:

  • 5 lbs. Chicken Cubed

  • Garlic

  • Melted Butter

  • Heavy whipping cream

  • Olive Oil

  • Panko Breadcrumbs (about 3/4 of the bag, probably about 2 cups)

  • Kinders Butter Seasoning

  • Broccoli

  • Brown Rice

To Cook:

  • Cube chicken and coat with seasoning, panko, and olive oil.

  • Spread out in one layer on a baking sheet.

  • Let cook for 20 minutes. While it’s cooking, melt butter, garlic and 1 cup heavy whipping cream (or milk of choice) on stove until combined. Once combined let sit.

  • When chicken is done cooking for 20 minutes take it out of the oven and pour the sauce all over the chicken. Cook again for 5-10 minutes until the chicken soaks up the sauce and gets crispy around the edges!

  • Take out of oven and let set for 5 minutes.

  • Serve with broccoli, and brown rice!

  • Enjoy!
