Spaghetti Night - Parmesan Crusted Meatballs

Meatballs have been a family staple since I was a little girl. Every family dinner was spaghetti, meatballs, and spring mix salad. For dessert it was cookies cookies and more cookies!

My MomMom had a great meatball recipe. I’ve just added my own twist to it since becoming a mom myself. Adding the parmesan crust just makes them extra yummy and crispy and delicious!

Emma’s Parmesan Crusted Meatballs

Serves: 10 people

Ingredients:

  • 4 lbs. beef (or meatloaf/meatball mix I just use plain beef or venison because that’s what I always have on-hand!)

  • Sage

  • Salt

  • Rosemary

  • Onion powder

  • Minced fresh garlic

  • Thyme

  • Basil

  • Pepper

  • Parmesan cheese

  • 4 eggs

  • 1 cup breadcrumbs (of your choice)

Directions:

  1. Mix together ALL ingredients. Make sure everything is well incorporated but NOT over-mixed.

  2. Roll into 2 inch size balls.

  3. Here is the FUN part. Grate fresh parmesan (or whatever parmesan you have on-hand) over top of the meatballs before they go in the oven. The parmesan cooks and they get crispy and DELICIOUS!

  4. Cook at 350 for about 25 minutes or until crispy and cooked to 165!

  5. Serve with spaghetti, spring mix salad and enjoy!
