Pineapple Coconut Shrimp Sheet Pan

I love a meal that makes me feel like I’m on the islands. This pineapple shrimp sheet pan recipe is SO yummy and will make you feel like you’re on vacation! Try it out for yourself and tag me if you make it!

Ingredients:

  • 2 lbs. Shrimp peeled and deveined

  • 1 can or 1 1/2 cups of pineapple

  • 2 Tbsp. Honey

  • Salt

  • Red and green peppers sliced thin

  • Thinly sliced onion

  • Diced potatoes

  • 2 Tbsp. Coconut Oil

  • Coconut flakes

Directions:

  1. Melt coconut oil. Toss shrimp with coconut oil, coconut flakes, salt, and honey.

  2. Transfer to greased baking sheet.

  3. Scatter peppers, and diced potatoes.

  4. Top with pinepaple.

  5. Cook at 375 for 20 minutes.

  6. Enjoy!
