Apple Donut Muffins

Yum. Yum is all I have to say about these apple donut muffins. They are so delicious. Packed with flavor like cinnamon, clove, and apple. And just so yummy. They are sure to please your crowds for any game day, breakfast, brunch, or dessert take along or hosting recipe! Check out how EASY they are to make too. I actually could have made more than 12 muffins, these came out SO big lol and I think these would make GREAT mini muffins! I am obsessed with my non toxic muffin tray from Caraway home. Check it out here! Alright, let’s get to it. Here’s the recipe!

Ingredients:

  • 1 Cup Apple Juice (I used Simply Apple)

  • 2 Eggs

  • 1/2 Cup Brown Sugar

  • 1/2 Cup White Sugar

  • 1/2 Stick Butter, melted & cooled

  • 1 tsp. Vanilla Extract

  • 2 1/2 Cups Flour

  • 1 tsp. Baking Soda

  • 1 tsp. Baking Powder

  • 1 tsp. Salt

  • 1 TBSP Cinnamon

  • 1 tsp. Ground Clove

  • 1 tsp. Ground Nutmeg

Topping:

  • 1/2 Stick Melted Butter

  • 1/2 Cup Sugar

  • 2 Tbsp. Ground Cinnamon

Directions:

  • First mix wet ingredients in a bowl. Mix to combine.

  • Next add dry ingredients and mix to combine.

  • I used a 1/4 cup measuring cup to scoop the muffin mixture into my muffin tins.

  • Cook at 350 for about 15 minutes. I would do about 8-10 if you’re doing a mini muffin!

  • Top make the topping, mix together cinnamon and sugar. Melt butter.

  • Once the muffins are cool enough to touch, dip in the melted butter, then coat with cinnamon sugar topping. (You can omit the topping, and you can also just put the cinnamon sugar on the top just be sure to do that after you scoop them into the tins before you put them in the oven.)

  • Serve cooled or warm. Whichever you prefer, with your favorite warm drink!
