Banana Nut Sourdough Muffins

I was trying hard to come up with some easy recipes with my sourdough starter this week and this one came to mind. I always make muffins each week but wanted to add in the sourdough to see if it made a difference in the recipes! They came out extra fluffy and delicious!

Banana Walnut Sourdough Muffins

Serves: Makes 11-12 Muffins

Ingredients:

  • 3 ripe bananas

  • 2 cups oat flour

  • 2 eggs

  • 1/2 cup honey

  • 1 tsp vanilla extract

  • 1/2 cup sourdough starter

  • 1/2 cup walnuts

  • 1 tsp baking powder

Directions:

  1. Mix together wet ingredients.

  2. Add dry ingredients to bowl and mix.

  3. Add walnuts last and mix until well incorporated.

  4. Scoop by 1/4-1/2 cup increments into a greased muffin tin.

  5. Bake for 30 minutes on 350 or until cooked through. Don’t overcook!

  6. Enjoy!
