Breakfast Cookies

These cookies are healthy and delicious. Packed with nutritious seeds like chia, hemp and flax you and your kiddos will love the flavor and the burst of nutrition when you eat them! Don’t overcook because they’ll get hard. They will stay good for about a week! Store in the fridge if you want to get longer out of them! I crush them up and top my overnight oats with them and they’re SO YUMMY that way! Enjoy!

Ingredients:

  • 1 Cup Peanut Butter (or almond butter)

  • 1/4 Cup Flour (any type of flour)

  • 1/4 Cup Rolled Oats

  • 1 TBSP Hemp Seeds

  • 1 TBSP Flax Seeds

  • 1 tsp. Chia Seeds

  • 1 Egg

  • 1 tsp. Vanilla Extract

  • 1/4 Cup Honey or Maple Syrup

  • 1/2 Cup Brown Sugar

Directions:

  • Mix together all ingredients to combine.

  • Scoop with a small ice cream scoop or with your fingers into small (about 11/2 inch) balls and place on cookie sheet. Recipe should make about 20 cookies.

  • Press down each cookie just until it’s not round anymore (similar to when you make peanut butter cookies!)

  • Bake at 375 degrees for about 10 minutes or until golden brown.
