Crockpot Chicken Enchiladas

This is such an easy and yummy recipe, and will definitely be a go to for us this crockpot season. I love making crockpot meals because they’re easy and delicious and require minimal work, prep, and dishes! Our dishwasher is currently broken so I’m handwashing dishes for my family of 5 right now and it’s very time consuming. So I’ve been making more casseroles and crockpot meals then ever before. Plus lots of one-pot meals. I just can’t spend more time washing dishes and putting them away then I am so you’ll see lots of new recipes that require minimal dishes from me in this season. I mean, you’re welcome! :)

So to start, I would suggest spraying your crockpot with spray olive oil. Just to make sure nothing sticks. I find this the easiest way for clean up. I’ve never used those crockpot bags but I know people have. I’m just not into adding more chemicals than I have to to our food so I steer away from them!

I used 5lbs of chicken but you can use less or more depending on how many people you’re making this for. If you’re going to use more than 7lbs of chicken I’d double the ingredients for sure.

Another tip: you can’t have too much cheese. Like the more cheese the better here.

Ingredients:

  1. 5lbs Chicken Breasts

  2. Olive Oil Spray

  3. 2 Yellow Onions Diced

  4. 2 Red Peppers Diced

  5. 2 Tbsps. Garlic Powder

  6. 2 Tbsps. Chili Powder

  7. 2 Tbsps. Paprika

  8. 1 Can Tomato Sauce

  9. 1 Can Diced Tomatoes

  10. 1 Cup Water

  11. 4 Cups Shredded Mexican Cheese

  12. Sour Cream

  13. Box of Hard Tortillas or Bag of Tortilla Chips

  14. Toppings: Sour Cream, Avocado, Jalapeños, Fresh Tomatoes, Mango, Lettuce, or any other topping you love on your enchiladas.

Directions:

  1. Spray inside of crockpot with olive oil spray.

  2. Add chicken to crockpot. Top with ingredients 3 through 10.

  3. Let cook for 6 hours on low. Stir at hour 3 (if you’re home!) This can sit longer than 6 hours too!

  4. At hour 6, add shredded cheese and stir.

  5. Top with crushed tortilla strips or tortilla chips. Or you can use these on the side in your bowl. I used mine for dipping instead of mixing in!

  6. Let cook another 15-30 minutes.

  7. Serve with your favorite toppings!
