Asian Chicken Stir Fry

Last night I was not sure what to make and I remember growing up we always had stir fry, at least once a week. Well, I know why. It’s super easy and flavorful to make and is just such an easy dinner that is also great for lunch the next day!

When I make a recipe I usually look up something as a guideline then make the recipe my own… so here is my version of Asian Chicken Stir Fry!

Asian Chicken Stir Fry

Serves: 4

Ingredients:

  • 2 lbs. Chicken Cut into Strips

  • 3 Bell Peppers

  • 1 Red Onion

  • 1 Broccoli Crown

  • 1 Cup Brown Rice

To make the Sauce

  • 2 TBSP. Rice Vinegar

  • 1 Cup Soy Sauce

  • 3 TBSP. Brown Sugar

  • 1 tsp. ground ginger

  • 1 tsp. red pepper flakes

Directions:

  1. Add olive oil to a deep pan, then add chopped onion and peppers.

  2. While the onion and peppers are cooking, use kitchen shears to cut chicken breasts into strips.

  3. Once the onion and peppers are cooked (about 10 minutes) add chicken to the pan.

  4. Steam broccoli in a pot, while onion and peppers are cooking.

  5. Add 2 cups water and 1 cup brown rice to a pot and cook while broccoli and veggies are cooking. This way the rice will be finished once the chicken is finished!

  6. Cook chicken through (about 10 minutes).

  7. Meanwhile, mix the sauce. Add all sauce ingredients to the bowl and whisk.

  8. Once chicken is cooked, moved chicken and veggies to the side and add the sauce to the open space. Let simmer until it bubbles. Then mix the stir fry with the sauce.

  9. Finally, add the broccoli to the deep pan.

  10. Let cook for about 10 minutes so the sauce has time to flavor the food!

  11. Serve by placing rice in the bowl then top with stir fry!

  12. Enjoy!
